Lemon and Lager Marinade

Hello everyone, my name is Lisa. My husband loves to barbecue but can't cook otherwise. We love to cook fish and chicken on the grill. Here is a recipe for a marinade that we really love. We generally buy a dark German beer and let it go flat before adding it to the recipe. The original recipe came from Paul Kirk's Championship Barbecue book. I hope you enjoy using it as much as we do.

One 12 ounce beer (flat) (we prefer dark)
1/2 cup olive oil
1/3 cup fresh lemon juice (fresh is important-3 or 4 lemons)
1 TBS minced fresh chives
1 TBS fresh thyme leaves
2 tsp pressed or minced garlic
1 tsp fine sea salt (kosher works)
1 tsp fresh ground black pepper

Just combine everything in a plastic bowl (not metal) and blend well. We place fish (or chicken or pork works well too) in a gallon zip-lock baggie, add the marinade, squeeze out the air, and place it in the fridge about an hour for fish, longer for chicken or pork. Then grill the fish over indirect heat on your grill until flaky. It sure is good.
